This is an oddity - one that's really delicious though! It is made from partly dried Shiraz grapes which are allowed to shrivel on the vine, a technique well-used in Italy and referred to there as "Appassimento". Hence the title of this new addition to the Ripper range: Rippassimento! The vineyards are in Victoria, where a cooler climate keeps the alcohol in check. So rather than this being a monstrous blockbuster, it is a richly fruited and harmonious number with a fresh and precise attack on the palate that persists long into the finish.
