Spirits Eigashima - A traditional Japanese liqueur made from plums macerated in alcohol and sugar, creating a sweet and fruity drink. The term umeshu refers to this type of plum-based liqueur, which is very popular in Japan, where ume plums, which are not classic plums but rather fruits similar to apricots, are infused in rice alcohol or distilled alcohol. Delicate and refined, it has a smooth and velvety texture, which distinguishes it from other fruit liqueurs by its balance between sweetness and acidity. Floral and herbaceous nuances can also be detected. It pairs well with savoury and complex dishes, from meats to mature cheeses and rich desserts.
