Vina Ventisquero’s Tara Atacama project aims to produce wines from the most extreme region in the world, Atacama in Chile. To capture the true potential of the resulting pure fruit and striking mineral notes of this chardonnay (the presence of which is pretty miraculous in itself, we think, as this is one of the globe’s driest regions) the grapes are harvested (by hand) in exceedingly low volumes. Only native yeasts are added, it’s not filtrated and only a small dose of SO2 is added, which Winemaker Galaz believes gives it “the freedom to express its extreme origin”.
