Wine Domaine du Roc de l'Abbaye - The expression of Sauvignon Blanc de Loire in the similarly to the winemaker of Roc de l'Abbaye. Painstakingly selected grapes by observing plots before the harvest. Cold pressing to preserve all of the fresh aromas of this variety. Fermentation at controlled temperature (16-18°C) preserves the fruit and develops the exotic notes of the wine. This is followed by maturation on the lees for three months, with regular stirring, to preserve all of the crisp aroma without adding excessive body to the wine.
