In the Midi they have been making rosé for over 2000 years, as long as they have in Provence, because the warm Mediterranean climate they share means that there is a need for cool rosés to refresh the soul and to complement the fish harvested from the seas. Pénombre Rosé is a great example of this. It makes the perfect aperitif or, on the table, it is a delight with any prawn dish, salads such as Niçoises or Caesar, grilled chicken dishes or of course with the Italian Tricolore of avocado, tomato and mozzarella.
