The Glen Moray 1988 Premium Octave cask #7037449 has aged for 34 years in oak casks then spent the final months in an octave cask. This is a limited release of only 87 bottles. This is a single cask, bottled in 2022 at cask strength, not chill-filtered or coloured.
For many years, Duncan Taylor Scotch Whisky Limited has experimented in the use of differing cask sizes for the maturation of single malt and single grain scotch whiskies. This research stemmed from the simple premise that there is more interaction between the wood and spirit over a shorter period of time in a small cask than in a large cask, allowing a faster melding of wood, air and alcohol. Tasting Notes
Colour: Old gold
Nose: Creamy vanilla, victoria sponge cake with lots of strawberry jam along with red apples glazed with brown sugar. Fresh mint and lime peel along with white chocolate make for a very complex nosing experience.
Palate: Clean and crisp, refreshing notes of citrus and apple pie. Caramel and toffee partner well to provide a depth of sweetness and character. Lots of sherry and marzipan along with a dusting of icing sugar and cinnamon sticks. Rounded, rich mouthfeel with a good helping of oily texture.
Finish: Vanilla and strawberry jam return on the finish as does the white chocolate. Creamy yet rich this expression dives deep into the sherry sweetness giving dried oak, fresh pine and lots of winter fruits. Exceptional depth along with being robust yet pleasant and easy drinking.
