75cl / 12% - The 2025 vintage of this accessible natural wine from Sicily, made with organic Catarratto grapes. Left on the skins for a few hours after pressing, the nose starts flinty and mineral, quickly joined by lemon, peach, jasmine and tarragon. The palate benefits from the skin contact, with a pleasingly increased texture and duration. Made with minimal intervention and unfiltered, so there is a chance of sediment contributing a light haze, but not to the detriment of drinking enjoyment.
