Only 1,965 bottles of this exceptional wine were produced at London Cru, London’s first urban winery. The Chardonnay grapes for this traditional-method sparkling wine were sourced from a single-vineyard plot in West Marden. The 2020 vintage was a wonderful year for quality, and the grapes were hand-harvested then transported to London where they were gently whole-bunch pressed. Once primary fermentation had taken place in a mix of stainless-steel tanks and neutral French oak barrels, the wine was aged on its lees for six months to add richness and texture. It was then time for the secondary fermentation, and after this the wine had extended lees-bottle-ageing for close to three years. The resulting sparkling wine is clean, lively, and fruit-forward with cooked pear, candied lemon peel, toffee apple and a touch of pastry on the nose.
