75cl / 12.5% - In the 1960's Jean Velut and his wife had to give up their farm land near the city of Troyes. They instead moved to land they held in Champagne and decided to develop a vineyard. Today they have seven and a half hectares of land and farm this sustainably. On the nose an earthy intensity with walnuts and baked apples. The palate is serious with hints of Bakewell tart and candied grapefruit but a salty fresh finish. Try this with roasted red mullet.
