Wine DOMAINES PAUL MAS - A direct pressing rosé wine. Each variety is made into wine separately. The wine is made on the lees in cement vats and is regularly stirred for 40 days. During vinification, the domaine regularly extracts the wine to retain as much of the fruit and concentration of flavour. On the nose, it is fine and subtle with notes of red fruits such as raspberry, redcurrant and strawberry, along with spring flowers like lily of the valley, lilac and rose. The palate is delicious, fresh and very drinkable with a good length on the finish. It partners very well with tuna tartare.
