Illicit Spirits' New Tom Gin is a nod to the Old Tom style of gin that was popular before the London Dry style came along. Old Tom is a sweeter gin that is similar to the original Dutch Genever. The Old Tom name style got its name as it was the presence of a black tom cat painted above a door that would signal an illicit gin shop was inside.
Illicit have developed a modern take on the style by distilling with pink peppercorns, rosehips and tonka beans, and sweetened post distillation with bee pollen and Scottish honey.
Produced in small-batches in a traditional direct-fired copper pot still, Illicit Spirits is a true urban craft distillery based in a railway arch just south of the River Clyde.
