Meaning ‘The Beauty of the Seasons, KI NO BI is the quintessential Japanese Gin. It is the first gin to be distilled, blended and bottled in Kyoto and has been made in a recognisable dry style, but with a distinct Japanese accent. This gift set includes The Kyoto Distillerys three signature gins in 20cl bottles. Their original spirit, KI NO BI Dry Gin, is crafted with 11 botanicals, including yellow yuzu from the north of Kyoto Prefecture, hinoki cypress wood chips, bamboo, ginger, gyokuro green tea from the Uji region and green sansho peppercorn berries, and is distilled in six flavour categories. KI NO BI SEI, based on a traditional Navy Strength version, isnt simply KI NO BI at higher strength.The production method is the same as KI NO BI – 11 botanicals are grouped by flavour into what we call the six elements , which are macerated and distilled separately, before being blended together with Fushimi water. However, the ratios are different in order to achieve the right balance; the higher concentration gives SEI its power from which the name derives. For many Japanese bartenders, tea element was the most popular and, as a result, The Kyoto Distillery were inspired to create KI NO TEA – a beautiful expression of their gin. Tea Grower, Horii Shichimeien, has been in the tea trade for 140 years. Utilising this expertise, they created an exclusive blend of gyokuro and tencha teas to provide a sweet and creamy flavour.
