75cl / 14% - This dry Spanish white wine is made exclusively by using Pedro Ximenez grapes, normally reserved for making the region’s famous sherry wines. Specialising in the singular grape varietal, the historical Bodegas Ximenez-Spinola has become masters of the grape, producing dry and dessert wines, along with sherries in Jerez. This 2021-vintage offers notes of raisins, prune, ripe fruits and oak – a great pairing for seafood and shellfish.
