Using the port method of fortification, you stop the fermentation by adding grape spirit and boost the overall booze level. Aged in oak for 24 months the results are nothing short of spectacular. Full of dark fruit, prunes, quince and cinnamon spice it is amazing with a dark chocolate torte or a classic cheeseboard.
