Chablis is one of the most prized wine regions of the world, producing some of its most exclusive white wines. It is situated well north of the rest of Burgundy, and in many years growers have a nerve-racking wait for the grapes to ripen. It is also renowned for its chalky, fossil-rich soil - very good for the vines, forcing them to struggle for water - but hard work for those working the land! The pay-off is that the resulting wines, thanks to the long slow ripening period and unforgiving soils, have an excellent balance of acidity, vibrant fruit, and classic mineral qualities. This wine was made by the multi medal-winning winemaking brothers Eric, Emmanuel and Herve Dampt. The Dampt estate lies in the ancient region of Tonnerre, just outside the Chablis district, but like many producers they have vineyards dotted all around the region.
