Wine DOMAINES PAUL MAS - This historic domaine in Corbières is at the foot of Alaric mountain. The Jérémie vineyard covers some 68 hectares in the Languedoc, Corbières and Corbières Boutenac appellations and enjoys a typically Mediterannean climate at an altitude of 40 to 150 metres above sea level. The soil is a gravelly clay limestone with round pebbles and sandstone. Each variety is vinified separately. Following grape selection, the intact Carignan bunches are placed in vats to undergo carbonic maceration. The Grenache and Syrah / Shiraz are fermented for five days at a controlled temperature and then undergo maceration for three weeks. Then, 30% of the wine is aged in American and French oak barrels for six months. A wine that expresses aromas of black fruits and spice. The palate is powerful and generous with supple, ripe tannins. This wine partners perfectly with red meat.
