This delicious white comes from a small, family-run winery in the town of Labastida. The precious grapes are grown facing the slopes of the Toloño mountain. They are picked by hand and winemaker Carlos Fernandez says this process "is carried out slowly with great calm and care - it is something we really enjoy, especially in good weather". The grapes are then taken into the cellar which is a curious underground network of 4 adjoining caves dating from 1400-1500. Here the wine rests peacefully in oak casks with the constant temperature and humidity naturally maintained the by the caves.
