The Xarel.lo grape is particular to the Catalonian region of Spain and generally found as one of the base grapes of that least exciting of fizzes - Cava. But what a pleasure this organic, vegan friendly specimen is. Made from 50-80 year old vines which impart concentration and complexity, the wine offers a delicate perfume of white flowers and a rich, dry, stony textured and slightly green fruited palate, this is a fantastic accompaniment to peppered seafood. Don’t serve this too chilled - allow it to display all those floral notes on the nose and texture on the palate.
