It's not widely known that the carbonic maceration technique (more commonly associated with the bright and jolly Beaujolais style) is actually very traditional in Rioja. We associate Rioja with big, heavy reds, and it's no surprise as that's the style that most often graces our homes and dinner tables with its presence in favour of the brighter and lighter carbonica style. Abel's a purist and works in a traditional way so the Jarrate is the typical expression of what the locals drink!
