Bourret is more widely known as Terret Gris, although that most likely doesn't ring any bells with most people as it is. Where it excels is in creating wines with the flavour profile of crisp whites, yet having more oomph in the body department. Some Picpoul has also been put into the blend which adds acidity and citrus flavours. All in all, it is a fresh wine. The palate flavours are light, citrussy and lively. It did seem simple to start with, but you'll quickly find that the complexity builds. It abounds with lemon, lime, sherbet, nettle and has a saline, slightly bitter finish. Lying in the background is an oyster-shell minerality and a little earthiness.
