70cl / 40% - A 2011-vintage Fins Bois Cognac from Fanny Fougerat, Marin is a collaboration with a cooperage from Jarnac, Christopher Coutanceau - a 3-star chef from La Rochelle - and an oyster farm. This Cognac has been finished for just 13 days in a pair of specially-made casks, crafted from staves that were stored in sea-swept warehouses on the Ile de Ré for a year, creating delicate layers of minerality and sea salt throughout the palate.
