70cl / 47.1% - A bright, grassy sotol produced in the highlands of the Sierra Madre Occidental mountain range. The flowering sotol plant is hand-milled and left to spontaneously ferment, creating a fresh flavour profile with layers of spice and woodsmoke. While not as well-known internationally as Mezcal or Tequila, this traditional spirit has been enjoyed in northern Mexico for more than 300 years. One to sip and savour.
