What wine does Limoux make?

Limoux sits inland in the foothills of the Pyrenees and is mostly devoted to the production of sparkling wine. Indeed, many believe that this was the world's first region to start making sparkling wine in 1531 thanks to the monks of Saint-Hilaire's abbey. It is known as Blanquette de Limoux which is made with the variety Mauzac and a few other varieties like Chenin and Chardonnay blended in. It is generally light, crisp, citrussy and makes for a good aperitif. Now, Cremant is the more popular Champagne alternative and this is also made there to a good quality.
