What is Pox?
Pox is something that is slowly creeping into the limelight with a growing reputation for those seeking artisanal, ancient spirits or bartenders looking to offer unique, exciting cocktails. It is a traditional Mayan spirit from Chiapas in Mexico made from distilled corn, wheat, and sugarcane. It has been a part of rituals for centuries and still is among indigenous communities, the name meaning ‘medicine’ or ‘cure’.
But until recently, it was made for consumption solely among the Tzotzil peoples behind closed doors. Around 2012, the Chiapas government relaxed laws prohibiting the sale of pox outside the state giving bars around Mexico access and the chance to help its reputation grow. It is certainly still a niche product, but it is unique and highly drinkable, setting it on a good trajectory as the rest of the world discovers it.
Due to lack of regulation and classification Pox can be made in more than one way and will vary depending on the traditions of each producer, but it is often described as having a light body and a blend of smoky, sweet, and earthy flavours including tortilla. It is occasionally likened to agricole rums.
