What is Awamori?

The oldest alcoholic drink in Japan, made only in Okinawa from long-grain indica rice and black koji (a type of mold). It has over 500 years of history behind it and is thought to be the predecessor to Shochu. It is aged in traditional clay pots which help mellow it and improve the flavour. ABV can reach up to 60% in some cases, although it is generally between 25-43%.

It is most popularly served with water and ice, but is very drinkable on the rocks or can make a unique cocktail component.


Styles of Awamori

Kusu - Kusu Awamori is aged for three years or more. This is not to be confused with Koshu which is aged Sake. The oldest surviving Kusu is 150 years old owned by the Shikina Distillery.

Hanazake - On the western island of Yonaguni, three distilleries produce this style which literally means "flower liquor". The ABV is 60% and was originally made for religious ceremonies.
