For many centuries the Ume tree has been a symbol for the coming spring in both, China and Japan, because it blossoms already at the end of January. Similar to the famous Sakura cherry blossoms, the Ume bloom is celebrated with countless festivals and special ceremonies.
Using the Ume as the base for the excellent sake, the two are blended expertly together. Perfect neat after dinner as a replacement for Limoncello, served with crushed ice. topped with Prosecco or in your favourite cocktail.
