What is aged gin?

Unlike conventional gins, which are rested after distillation in stainless steel tanks, aged gins are stored in wood allowing them to take on the character of the vessel, as is common in wine and indeed other spirits like Whisky, Cognac and Armagnac. Despite the fact that this seems like a new style, aged gins go right back to the start. After all, anything in liquid form was transported in barrel rather than a stainless steel tank back then!

In many ways, aged gin shares a lot with whisky on their own. Maturity brings complexity, and arguably there is even more in the gin thanks to the addition of various botanicals. This can make them more herbal, and of course junipery, although it mellows depending on the extent of age and even the wood used.

For example, a Bourbon cask will typically impart notes of vanilla and honey, whilst a Port cask will bring red fruit, nuts and sweetness. Whatever your other spirit preferences, we'd always recommend choosing a gin from that barrel so you can enjoy a marriage of two of your favourite flavours.
