What is Creme de Cassis?

Creme de Cassis is a sweet, red French liqueur made from blackberries that is a popular component of cocktails, most notably a Kir Royal. The berries are soaked in alcohol, juice is then extracted and some sugar added.

It is a Burgundian speciality, although is also made in other parts of France such as Anjou and even different countries including Quebec in Canada and Tasmania even.

As a result, in 2015 a new PGI was made for Burgundy, the "Creme de Cassis de Bourgogne" designation, which guarantees the Burgundian origin. There is also "Creme de Cassis de Dijon", where the berries have come specifically from Dijon.
