What is a Tahona Tequila?

Tahona is an ancient Aztec word meaning "flour mill", which describes the large, heavy stone milling wheel used in traditional Mezcal/Tequila production to crush the agave. The wheel is pulled around by machine, or in traditional houses a donkey, horse or ox, to crush the agave in a giant vat.

Because the process is much more traditional, producers sacrifice efficiency and cost saving when making a Tahona Tequila. But, it's got to be worth it, right? Right! Using the large stone to crush the agave preserves more of the roasted agave flavour and preserves more sugars that contribute to fermentation. As a result, Tahona's can have a more earthy, cooked profile with a unique texture and sweeter nature. They are rounder, richer and do a wonderful job at really showcasing agave.
