Some of the world's very finest Sauvignon is coming from Chile's coastal regions. Just taste the vibrant intensity of Pago Centro. San Antonio Valley is one of the best and in recent years there's been a scramble to buy land there. It lies just south of Casablanca, where cooling sea breezes and sandy soils produce crisp, aromatic whites, and is especially suited to Sauvignon Blanc. At the invitation of head winemaker Nicolas Bizzarri, three times 'New Zealand Winemaker of the Year' Matt Thomson took charge of this wine's vinification. Only the finest bunches of Sauvignon were cool fermented to produce an incredibly fresh white, with attractive, citrus minerality. Serve chilled with seared fish fillets or a goat's cheese and asparagus tart.
