Tasting note André Ostertag could hardly be called a run-of-the-mill Alsace winemaker. To some traditionalists he is an eccentric, constantly tinkering and experimenting with new styles that break the mould. In reality, he simply seeks to coax the ultimate expression from his various vineyard terroirs. Open-minded and innovative, he does not restrict himself to conventional techniques or the Appellation d'Origine Contrõlée (AOC) – a French term for a denominated, governed wine region. He severely restricts yields to much lower than is necessary to ensure the vines concentrate their efforts to just a few bunches and uses practises seldom seen elsewhere in Alsace, such as ageing his whites in oak and not filtering the wines.
