Don Cayetano is from Luis Felipe Edwards, a family winery with extensive vineyard holdings, including some daringly close to the ocean in Casablanca. Winemaker Nicolas Bizzarri, the first Chilean to graduate from Australia's famous Roseworthy wine college, insists upon the grapes being harvested in the early morning, and cooled as soon as they reach the cellar to retain maximum freshness of flavour. Showing real vibrance and stony fresh poise, this white is delicious on its own and with seafood, salads or stir-fries.
