You won't find many estates in Burgundy being quite as meticulous as this domaine. All their vineyards were certified organic from the outset and now over half are managed biodynamically. Put simply, this approach takes organic farming to the next level and encourages biodiversity in the vineyard to help strengthen the vines. This results in a purer expression of each individual terroir, putting a more authentic - and unique - wine in your glass. For this rare white Savigny, whole bunches are pressed slowly and the juice gently transferred to wooden casks. After fermentation, the wine is transferred into oak barriques to rest for a year prior to bottling in accordance with the lunar calendar. Sublime with sauced fish for many years to come.
