Down in the south of Brazil there is actually a huge Italian ancestry. It's very evident in the food across the region of Serra Gaucha with a plethora of pasta dishes. But, as Vinicola Salton shows here, in the wine too. The only reason this can't be called Prosecco is a legal one. It's not from the eponymous region in Italy. But Salton's founder, Antonio Salton, was. And his legacy is a fine example of how best to cultivate the Glera grape in what are surprisingly very similar climatic conditions to Veneto, where he left for Brazil back in the 19th century.
