Soave is one of Italy's best known whites and, with this wine's elegance and mineral fresh poise, it's no wonder it is currently enjoying a surge in popularity. Jancis Robinson MW even asserts that premium Soave, like this Classico, "deserves the kind of acclaim white Burgundy gets". Borgo San Lorenzo lies between the ancient Soave and Monteforte castles where the oldest and very best vineyards are found. Their winemaker crafted this white from a combination of crisp, zingy Garganega, selected from old vines for extra concentration, and delicate, nutty Trebbiano, leaving the grapes on their skins for a short while for extra complexity. With its zippy pear and greengage flavours, it's ideal with antipasti, pasta primavera or fennel risotto.
