Exceptional Chardonnay from Dandelion Vineyards, an exciting project established by Peggy and Carl Lindner, Elena and Zar Brooks, and Fiona and Brad Rey. With Elena in charge of winemaking, they source fruit from precious old vineyards in the Barossa, Eden Valley, McLaren Vale and, of course, Adelaide Hills. Whole bunches are hand harvested in the cool twilight to fully capture the grapes' freshness. The fruit is then carefully destemmed before being gently pressed, with only the free run juice for added purity. Cool fermentation in stainless steel is followed by ageing in French oak, with no fining before bottling to fully capture its richness. Crisp and lively with integrated oak, it's a supreme partner to salmon en croute or chicken.
